Brewing Variables

Coffee Brewing at High Altitude

Adjust heat management when water boils at a lower temperature.

By Julian R. NorthcottUpdated July 2026

At higher elevation water boils below its sea-level temperature. This can affect methods that depend on high slurry temperature, but altitude is only one variable.

What to evaluate

Keep the decision connected to the actual coffee, brewer and serving goal.

  • Preheat and cover when useful
  • Use insulated brewers
  • Measure actual behavior
  • Keep changes small

A repeatable workflow

Use one baseline, then change only what the evidence supports.

  1. Establish a new baseline
  2. Track heat and drawdown
  3. Adjust one variable
  4. Taste after cooling

Common mistakes

These errors make comparisons unreliable or create avoidable problems.

  • Trying to exceed local boiling point
  • Changing every variable
  • Ignoring dry storage conditions
  • Blaming altitude for every weak cup
Altitude changes heat management, not the need for a repeatable recipe.
