Pour-Over Coffee

Build a reliable manual percolation recipe with measured pours.

By Julian R. NorthcottUpdated July 2026

Pour-over sends water through a coffee bed and filter. It can produce clarity and aroma, but depends on even wetting, grind, flow and brewer geometry.

What to evaluate

Keep the decision connected to the actual coffee, brewer and serving goal.

  • Use a controllable kettle
  • Match filter and brewer
  • Start with a moderate ratio
  • Track drawdown without forcing it

A repeatable workflow

Use one baseline, then change only what the evidence supports.

  1. Rinse and preheat if useful
  2. Bloom evenly
  3. Pour in repeatable stages
  4. Taste after cooling

Common mistakes

These errors make comparisons unreliable or create avoidable problems.

  • Pouring only at the edge
  • Random agitation
  • Losing excessive heat
  • Changing the recipe every brew
Learn one recipe before comparing multiple techniques.
