Pour-Over Drawdown Too Slow or Too Fast

Use flow as evidence without treating one target time as universal.

By Julian R. NorthcottUpdated July 2026

Drawdown depends on grind, fines, filter, dose, geometry and agitation. Taste remains the deciding evidence.

What to evaluate

Keep the decision connected to the actual coffee, brewer and serving goal.

  • Check filter seating
  • Fines slow flow
  • Swirling can migrate fines
  • Large doses deepen the bed

A repeatable workflow

Use one baseline, then change only what the evidence supports.

  1. Repeat the same pour
  2. Adjust grind one step
  3. Keep dose and water
  4. Record time and taste

Common mistakes

These errors make comparisons unreliable or create avoidable problems.

  • Pouring faster to force clogs
  • Changing filters and grind
  • Using another brewer target
  • Rejecting good taste because of time
Time is diagnostic, not a score.
